According to Banerjee, the Frankie Roll A paratha or roti is usually filled with a spiced filling such as chicken, mutton, paneer, or vegetables, topped with a tangy chutney and optional cheese or egg relish. It has since become a beloved snack across India.
Here is a simple recipe to help you make it in the comfort of your kitchen:
Ingredients (4 servings):
– Large rotis or parathas
– Oil
– Medium onion, thinly sliced
– Medium tomatoes, finely chopped
– Cup of cooked chicken (or paneer/veg for vegetarians)
– garam masala
– Red chili powder
– Turmeric powder
– Chaat masala
– Salt to taste
– Green sauce
– Pickled onions (optional)
– grated cheese (optional)
– Beaten egg (optional, for coating the paratha)
Instructions:
Prepare the filling
– Heat oil in a pan and fry the onion until golden brown.
– Add tomatoes, cook until soft.
– Add chicken, garam masala, chili powder, turmeric and salt. Cook for 5-7 minutes.
Cook the parathas
– For the egg layer, spread beaten egg on one side of the paratha while cooking. Flip and cook until the egg is set.
Gather Frankie
– Spread green chutney on the paratha.
– Add a portion of the chicken mixture, pickled onions, and cheese if using. Sprinkle chaat masala for extra flavor.
– Roll in butter paper and serve.
